Back to School Lunch Ideas
Subscribers to my weekly e-zine received ideas this week for back to school lunches. In addition to ideas for what to pack, I also talked about what to pack food in, including "bento boxes". I received this comment from Leslie, a subscriber: "Crystal,
I have been making bento lunches for myself for years! My son is 14 and has long outgrown them, but I find that they make a great (calorie perfect) lunch for an adult too. There are larger bento boxes that hold about 500 ml or approx. 500 calories. And some, for those with a healthy appetite, that will hold up to 1000 ml (or approx. 1000 calories). These are an easy way for someone that wants to keep track of their calories for a day. I have a lot fun making them, and have had several requests from people at work to make one for them! I hope that more people will start making bentos for lunch... they are economical, green, nutritious, and calorie perfect!"

Bacon wrapped dates
Desired amount of fresh pitted dates 1 lb bacon (Thick sliced bacon does not work well) Wrap 1/2 slice uncooked bacon around date. Secure bacon with toothpick.

Cooking Corn on the Cob
The e-zine I just sent out features 3 ways to cook corn on the cob. A viewer, Laurie, wrote in and shared her method: Hey Crystal, I just wanted to share an even easier way to cook corn in themicrowave. Leave it in the husks! Cut the silks off to almost the end of the ear, and most of the stalk off as well. Then microwave about 5 min per ear. I usually do 5 though in about 20 mins. while I cook the rest of the meal. You will be amazed at how perfect the corn is and easily those silks and husks come off after cooking this way! Thanks for sharing Laurie!
