Carmen's Potato Coated Chicken

This is another one of my SIL Carmen's recipes which are always super simple (thank goodness)!

1 l/b boneless, chicken breast
Pour some Italian Salad dressing in a bowl to coat chicken
Combine and mix:
3/4 cup Boxed Mashed Potato flakes
1/4 cup grated parmesan cheese

1) Dip chicken in dressing then coat with flakes and cheese.
2) Brown coated chicken in skillet with small amount of oil ( 3-4 minutes each side)
3) Cover and cook on low heat 10-15 minutes or until cooked through (juices run clear).

P.S. Works good fish too!

Sitcking Problem

Seems to me that the problem is that your oil wasnt hot enough = It needs to cook faster or the outside coating wont stick to the chicken and will come off and attach to your frying pan...Try again so that you are quick frying and then you shouldnt have a problem.

Harder than I thought

I am a newbie so excuse me for my rookie mistakes, but I found this recipe a lot harder than I thought it would have been. Browning the chicken, it stuck to the pan, and the oil burned me when it splashed out. When scrapping it off the bottom of the pan it lost all the coating, and then when you turn it to low to cook its like ruining my pan because its sticking and its just plain chicken by that point! Tips need apparently!
