Black Bean Quesadilla's
1 Can of Blackbeans
Salsa (to your liking)
Pepper Jack Cheese (or cheddar if too spicy for kids)
1 Avocado (cut into small slices)
Mix blackbeans and salsa together in a bowl. Scoop some onto 1/2 of a tortilla. Add Cheese. Fold tortilla and cook in pan about 2-3 minutes per side. Remove from pan. Open tortilla and add some avocado. Close and enjoy! These are so quick and easy. My family enjoys them at least once per week. Refried beans and spanish rice go well with it.
