1 (15 ounce) can julienned beets (if you can't find these, buy sliced beets and cut them into small strips) 1/2 cup red wine vinegar 2 1/2 Tablespoons granulated sugar 2 teaspoons horseradish
Drain beets. Combine all ingredients in a medium mixing bowl. Adjust the amount of vinegar, sugar and horseradish to suit your tastes. Chill for at least 2 hours before serving. Prior to serving, mix and drain excess liquid.
