Egg Salad Recipes
Here are two egg salad recipes, one for a simple egg salad, and one that is jazzed up with dill and red onion. Both are delicious for an easy lunch or dinner on a hot day. If you are unsure of how to cook eggs scroll down on my cooking tips page. I even give tips on how to peel hard boiled eggs. These recipes use a technique my husband's grandmother taught me. She always thinned out mayonnaise or salad dressing with a little milk before adding it to salad recipes. I like this method because it seems lighter and lets the flavor of the eggs shine through. If you like a thicker dressing, by all means omit the milk.
Simple Egg Salad Recipe
6 hard boiled eggs 1/2 cup mayonnaise or salad dressing such as Miracle Whip 2 Tablespoons milk
Place Hard Boiled Eggs in a medium sized bowl. Using a fork or potato masher (my preference) chop up eggs finely. In a separate container mix the mayonnaise and the milk together. It may take about a minute of stirring to achieve a smooth texture. Combine the thinned mayonnaise with the chopped up egg. Serve over lettuce or in a sandwich. Serves 2-3, can be doubled or tripled
Dilled Egg Salad Recipe
6 hard boiled eggs 1 Tablespoon finely chopped fresh dill 1 Tablespoon finely chopped red onion 1 teaspoon sweet relish 1/2 cup mayonnaise or salad dressing such as Miracle Whip 2 Tablespoons milk
