Crunchy chicken nuggets

The kids can really get involved in this one too as long as mom or dad cut up the chicken. You can substitute the mayonnaise for other sauces like ketchup or even chutney. For an adult treat, try dipping the chicken in satay sauce or sweet chili before dipping in the breadcrumbs.

Chop up some chicken breasts into chunks. Dip them in low fat mayonnaise then seasoned toasted breadcrumbs and place on a baking tray. Drizzle with melted butter and cook in a moderate oven until chicken is cooked through and breadcrumbs are crunchy.

Serve with kid friendly sticks of cucumber, baby tomatoes and carrot sticks.
