Coconut Tart

Ingredients
2 cups sugar
1/2 cup butter
2 eggs beaten
2 tablespoon lemon juice and zest
1 cup coconut freshly, grated
1 tart/pie shell,unbaked
Method
Preheat oven 350F. Cream butter and sugar. Add eggs, lemon juice, zest and coconut. Pour into an unbaked tart shell and bake about 40 minutes or until tester comes out clean.
