Recipe Background

I adapted a recipe from the Fannie Farmer Baking Book to come up with this recipe for Chocolate Dream Bars. These are fast and easy to make. They are also thick and rich, so you may want to cut them into small squares!

Chocolate Dream Bars

Crust:
2/3 cup unsalted butter softened (about 20-25 seconds in the microwave will soften this amount of cold butter)
2/3 cup brown sugar
2 teaspoons vanilla extract
1 1/2 cups flour

Topping:
4 eggs
1 1/2 cups brown sugar
2 teaspoons vanilla extract
1/3 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups shredded sweetened coconut
1 1/2 cups chocolate chips
1 1/2 cups chopped walnuts

Preheat the oven to 350'F. Make the crust by creaming together the butter, brown sugar and vanilla. Add the flour and mix until just blended. Pour this mixture into a 9"x13"x2" glass baking pan. Use your fingers to press the mixture evenly across the bottom of the pan. Bake for about 13-14 minutes and then cool for at least 5-10 minutes before topping.

To make the topping, use the same bowl to beat the eggs with the brown sugar and vanilla (a stand mixer or hand mixer is recommended to thoroughly mix these together). In a separate small bowl, mix the flour, baking powder, and salt together. Add this flour mixture to the egg mixture. When blended stir in by hand the coconut, chocolate chips, and walnuts. Evenly spread this topping mixture over the pre-baked crust. Bake for 30 minutes and cool. Cut into 1" bars

Yeild: 35 1" bars
